β¨ Instant Kesariya Doodh Jalebi π
Crispy, juicy jalebis served in warm saffron-infused milk. Made without food color and without fermentation, this festive dessert is easy, delicious, and ready in no time!
β¨οΈIngredients:
For the Batter:
β’ 1 cup maida
β’ 2 tbsp cornflour
β’ Β½ tsp baking powder
β’ 2 tbsp sour curd
β’ 12 to 15 saffron strands soaked in Β½ cup milk (or water)
For the Sugar Syrup:
β’ 1 cup sugar
β’ Β½ cup water
β’ 10 to 12 saffron strands
β’ Β½ tsp lemon juice
β’ ΒΌ tsp cardamom powder
For the Kesariya Milk:
β’ 1 cup full-fat milk
β’ A few saffron strands
β’ Chopped pistachios
β’ Sliced almonds
β’ 1 to 2 tsp sugar (optional)
β¨οΈMethod:
1. Soak saffron in warm milk (or water).
2. Mix maida, cornflour, and baking powder.
3. Add sour curd and saffron milk (or water) to make a smooth, ribbon-like batter. Rest for 15 to 20 minutes.
4. Prepare the saffron sugar syrup and keep it warm.
5. Pipe jalebis into hot ghee and fry until crisp and golden.
6. Dip the hot jalebis in the warm syrup for 20 to 30 seconds.
7. Warm the milk, infuse it with saffron, add nuts and optional sugar.
8. Serve the syrup-soaked jalebis in the warm kesariya milk.
