Tender Coconut Kheer

“Elaneer Payasam” or Tender Coconut Kheer, is a must-try dessert! This is a favourite of my family, is simple and easy to make and really tasty.

Tender Coconut Kheer is a celebration of simplicity, a testimony to how the most straightforward ingredients can be transformed into something truly extraordinary.

Ingredients:

* The flesh of 2 tender coconuts (a bowl full)
* 1 litre Full Cream Milk
* 1/2 cup Jaggery
* 1/4 cup Mixed Dry Fruits (Cashew nuts, Raisins)
* Dry Coconut (sliced)
* 1/4 tsp Cardamom Powder
* A pinch of Saffron Strands (soaked in warm milk)
* 1 tsp Ghee (Clarified Butter)

Instructions:
* Heat a teaspoon of ghee in a pan and roast the dry fruits, and dry coconut and keep aside
* Chop some tender coconut and keep it aside, puree the remaining tender coconut
* Boil milk in a kadai/pan, reduce the heat to low and let it simmer. Stir occasionally to prevent the milk from sticking to the bottom.
* Once the milk reduces, add cardamom powder, and jaggery & mix well. Then add the saffron strands soaked in milk and mix well
* Simmer for a few more minutes, let this then cool down
* Once cool, add the tender coconut paste, pieces of tender coconut, dry fruits and mix well.
