Asian greens with Stir fried chicken

Ingredients

100g diced chicken
1 piece of ginger
1 tbsp coriander
1 chilli
30g mange tout
50g pak choi
20g shitake mushrooms
1/2 tsp star anise
2 spring onion
splash of nam pla
1 tbsp ground nut or sunflower oil
Splash of soy sauce

Preparation

1. Heat some oil in a high sided frying pan or wok and add the garlic, chicken and a little chilli.

2. As the chicken is cooking add the ginger, spring onion, mange tout and star anise followed after a minute by the shitake mushrooms and the plash of nam pla and soy sauce.

3. When the chicken is cooked serve in a bowl with a sprinkle of the fresh coriander.
